Just Peachy Pie

peachpieMy friends, I have to share with you the BEST peach pie ever.  And it’s sooooo easy.  With our local peach orchard producing some of the sweetest peaches I’ve ever eaten, I’ve cranked out a few of these pies this summer.  I’ve also made up the pie filling and then popped it in the freezer, ready to be taken out and placed into a pie crust and baked on a cold, winter day.  YUM!

Here you go:

Combine: 3/4 cup sugar, 4 TBS flour and 1/4 tsp cinnamon.

Add: 5 cups sliced peaches. (I will throw in a handful of blueberries too!)

Pour into a pastry lined pie plate. Dot with 2 TBS of butter. Cover with top pastry.  Cut slits for steam to escape.

Bake: 400 degrees for 45-50 min.
